🌯 Crispy Crunchy Chicken Fajita Wrap
🛒 Ingredients (Serves 2–3)
For the filling:
- 2 boneless skinless chicken breasts, sliced thinly
- 1 bell pepper (any color), sliced
- 1 cup mushrooms, sliced
- ½ large onion, sliced
- 1½–2 tbsp A Spice Affair Fajita or Taco seasoning
- 1 tbsp olive oil
- Salt & pepper to taste
- Juice of ½ lime (optional but amazing)
For the crunch & wrap:
- 2–3 large flour tortillas (burrito size)
- ½ cup shredded cheddar or Monterey Jack
- ½ cup shredded lettuce or cabbage (for fresh crunch)
- ¼ cup sour cream or chipotle mayo
- Optional: crushed tortilla chips for EXTRA crunch
- Butter or oil for crisping
🔥 Step 1: Cook the Filling
- Heat olive oil in a large skillet over medium-high heat.
- Add sliced chicken. Sprinkle generously with A Spice Affair seasoning.
- Cook 5–7 minutes until golden and cooked through.
- Remove chicken and set aside.
- In the same pan, sauté peppers, mushrooms, and onions until slightly caramelized (about 5 minutes).
- Return chicken to the pan, squeeze in lime juice, and toss everything together.
👉 You want slight browning — that adds flavor AND texture.
🌯 Step 2: Build for Maximum Crunch
Lay out a tortilla and layer in this order:
- Cheese (this helps seal the wrap)
- Chicken & veggie mixture
- Crushed tortilla chips (trust me 🔥)
- Lettuce or cabbage
- Drizzle of sour cream or chipotle mayo
Fold in sides, then roll tightly like a burrito.
🥇 Step 3: Make It Crispy & Crunchy
- Heat a clean skillet over medium.
- Lightly butter or oil the outside of the wrap.
- Place seam-side down in the pan.
- Press gently with a spatula and cook 2–3 minutes per side until golden brown and crispy.
For EXTRA crunch:
- Sprinkle a little shredded cheese directly into the pan before placing the wrap down — it creates a crispy cheese crust 👌
